- 1 cup vegetable oil
- 1/4 cup cornstarch
- 1 egg
- 1 tablespoon water
- 1-1/2 cups panko breadcrumbs
- 3 small avocados, pitted, peeled
- 1/2 teaspoon kosher salt

Complete Nutrition Info- Heat vegetable oil in a 10-inch nonstick skillet over medium-low heat to 350°F.
- Pour cornstarch into a shallow dish, whisk egg and water together in a second shallow dish and pour breadcrumbs into a third shallow dish.
- Cut each avocado half into 4 thick slices. Coat slices in cornstarch and shake off the excess. Coat with egg wash followed by breadcrumbs. Place on a plate while you coat the rest of the slices.
- Carefully place breaded avocado in hot oil in batches and fry until golden brown on all sides, turning carefully. It should only take about 1-minute total. Remove to a paper towel-lined plate. Sprinkle salt on hot avocado fries. If your oil has burned breadcrumbs in it, try to remove them between batches.
- Serve crispy avocado fries with P.F. Chang’s® Home Menu Dynamite Hot Sauce for dipping.
