Spiralized Veggie and Mango Salad

  • 2 large carrots
  • 1 English cucumber, unpeeled
  • 1 medium red bell pepper, thinly sliced
  • 1 medium mango, peeled, pitted and thinly sliced
  • 1/2 cup dry roasted peanuts, crushed
  • 2 green onions, thinly sliced
  • 1/4 cup fresh Thai basil leaves, torn
  • 1/2 cup P.F. Chang's® Home Menu Mango Sweet & Sour Sauce
  1. Spiralize carrots and cucumber using a spiral vegetable slicer. Alternatively, use a vegetable peeler to shave long thin strands of each.
  2. Place carrots, cucumber, bell pepper and mango in large bowl. Stir in half of the peanuts, green onions, basil and Mango Sweet and Sour Sauce. Pour into serving bowl. Garnish with remaining peanuts, green onions and basil and drizzle with remaining sauce. Serve immediately.
